Just found this page- good stuff. tonight I made meatballs with ground bison. 1lb lean ground beef 1 med carrot 1 small scallion, finely chopped 1 egg 1/4 tsp garlic powder 1/4 tsp onion powder 1 TBSP flaxseed oil I used the "shavings" from my juicer (kale, carrot,apple) instead of just a carrot. Real garlic to taste and onion. Then oregano, thyme, and hot pepper flakes. I wish I had added walnuts to give it a different texture but they were still good. Mix ingredients and make into small balls. Place balls in Pyrex dish coated with flaxseed oil. Bake covered @ 350 for 30-45 minutes. Serves 2-3. Enjoy on a bed of arugula with tomato/pasta sauce.
