Fresh Fish (recommend wild flounder) 4-6 Roma tomatoes 1 large onion 4 cloves garlic Kalmatta olives (about 10-15) EVOO
-boil & skin the tomatoes, set aside and let cool - slice onion and dice garlic, sautee in olive oil - dice tomatoes and olives, add to the pan - simmer and reduce to a thick sauce - once sauce thickens, place fish in a baking dish and cover with tomato sauce
- bake 450 for 15-25 minutes. 9 be sure to check the fish in the center
** note- olives are technically non-paleo b/c of the salt. (salt is off limits) but several people have commented that rule is commonly ignored. choose for yourself!
