My roommate taught me this one! Just shred some beats and carrots, mix in minced garlic and onion, add salt and pepper to taste as well as balsamic and apple cider vinegar. It tastes great! I was thinking it would be super tasty to add bacon to it as well. What do you all think?

I love making this too...I've eaten it with turkey bacon on the side, and it definitely tastes good!
I usually add grated daikon radish--you know, the giant white carrot-looking thing over by the radishes.
