You can never go wrong with meatloaf!
2lb. ground beef 1lb. sausage 2 finely chopped maters 1 red onion 1 bunch cilantro 1 jalapeno juice from 1 lime
form into a loaf and bake in a pan that will collect the juice - there will be a lot of juice cooked out of it. cook @ 350 until internal temp reaches 160. i didn't time it, sorry. i imagine it was about 45 mins???
serve with steamed broccoli and carrots and rice for the non-paleo's. it stuck together well, i was surprised. and it tasted really good. even my husband enjoyed it...

what did you use to keep the meatloaf together?
I am used to some kind of grain and egg to bind it. I think this will work without the grains.
My give it a try with my own twist.

Nope, that is all i used. it stuck together well. but there was A LOT more juice than usual - probably 11/2 inches of juice in the bottom of the pan. i was thinking that a container of salsa would probably have made the entire prep process much faster. anyway, it was fabulous! good luck with it! kate
