I named this one in honor of a dish my mom made for me when I was a little kid. It had ground beef in it and honestly I can't remember what else was in it. But I wouldn't eat it. Until of course she called it Cowboy stew and told me Cowboys ate it. After that it became my favorite dish! So hear it is. The new and improved Paleo Cowboy stew:
1 pound ground bison 4 scrambled eggs Red, Yellow, Green or Orange peppers Broccoli Onion Mushrooms Cayene, Garlic Powder, Celtic Sea Salt, Ground pepper
Rub pan in a blend of olive and flax seed oil Throw onions in first until softened Then throw in Bison Cook until it is 3 quarters done Throw in all veggies and spices. Cook until softened. Eat it up Cowboys and Cowgirls! Yeehaw!
Note: Best eaten around an open fire as the sun sets behind a cactus while your horse Silver eats an apple.

i'm making this now in a (gasp) crock pot, wishing i was in Moab, UT cooking it over a hot fire...thanks for the recipe.

Oooo. Sounds good. I was thinking that Cordain's recipe for the paleo ketchup would go great with it!
