This recipe really isn't that exciting, but I was just giddy to be able to cook something for Asheville's homeless that isn't laden in sugar and fat, like most of the food that people seem to donate to our shelter.
Today, though, I was able to score a free case of spaghetti squash from MANNA foodbank, plus a kind farmer donated 8 cartons of eggs from his chickens. I defrosted some turkey sausage I had been saving for something special, and voila!! Paleo frittatta to feed 200!!
Homeless Paleo Breakfast
Spaghetti Squash
Eggs
Salt
Cayenne/Chili/
Turkey Sausage
Frozen Spinach
Place boxes of strange generic spinach in hot water to defrost. Next, cut up spaghetti squash, scoop out innards, place in pot with enough water to cover it. Turn on high, them down to simmer when water is boiling. Simmer for 5-10 minutes.
While spaghetti squash is simmering, put ground turkey sausage in skillet on medium heat and stir regularly, til evenly brown. Add defrosted spinach and mush it all together. Turn off heat. I pour the juice on my dog's food. Other people save it to cook with later.
Crack all the eggs, add salt, cayenne, chili powder, etc. Maybe turmeric? Or paprika? Whisk together for a little while (I added milk to make it fluffier, but that is not paleo).
Scrape out spaghetti strands from squash, put in glass baking pan. Add turkey sausag/spinach mixture, stir it around. Pour egg stuff on top.
Bake in oven for 20-40 minutes, til its firm in the middle.
