I was actually too shy to bring this to the paleo potluck on friday, but it is a very good stew for winter. Its medicinal aspects are formulated to help the liver, which might need help after holiday boozing.
Thai Fish Stew
Ingredients
2 tblsp. olive oil
1 can unsweetened coconut milk
1 can filtered water
1 lb. shrimp
1 lb. squid* (I usually use squid, tilapia, or scallops, whatever is safe, fresh, or cheap)
1 spaghetti squash
4 little green onion, finely chopped
a lot of finely chopped napa cabbage
2 carrot
1 small burdock root, grated**
a lot of fresh grated ginger
Thai Kitchen green curry paste
chili powder
lemon juice
salt to taste
Cut spaghetti squash in half, scooping out insides, and cut into 1 inch slices. Boil in medium pot til tender. Scrape out little spaghetti tendrils off squash.
Combine coconut milk, water, spaghetti squash, napa cabbage, carrot, and burdock root in large pot and bring to boil, then turn down to simmer.
Meanwhile, cut up seafood into bite-size pieces. Heat up olive oil in wok or saute pan, add onion and a couple teaspoons of curry paste. Throw in seafood, and lightly saute, making sure fish get coated in curry. Add as much chili powder as you dare.
When the shrimp is pink and the squid is white, add to soup. Add lemon juice and salt to taste. This soup tastes even better the next day.
* Don't be scared of squid! It is often affordable and is a good source of protein and minerals. Chinese medicine recommends squid for strengthening blood and qi, as well as tonifying the liver.
**Burdock root is a brown root vegetable that can be found at the co-op, Earthfare, or Greenlife. It is in the produce section, usually by the daikon, carrots, parsnips area. You can't really taste it in the soup, but simmering it with the vegetables is similar to making a medicinal decoction, right in your own dinner! The medicinal qualities of burdock are pretty amazing."It helps the kidneys to filter out impurities from the blood very quickly. It clears congestion in respiratory, lymphatic, urinary and circulatory systems. Burdock releases water retention, stimulates digestion, aids kidney, liver and gallbladder function."
