I am unsure of how paleo soy sauce is but everything else is pretty close. Plus this was too delicious & easy not to share!! Ingredients: - 2 boneless skinless chicken breast halves - 1 tablespoon soy sauce - Dash of Cumin - Dash of white pepper - 1 clove chopped fresh garlic - 1 tablespoon and 1-1/2 teaspoons extra virgin olive oil, divided - 1/2 cup sliced celery (1/2 inch pieces) - 1/2 cup thinly sliced carrots - 1 medium tomato cut into pieces - 1/2 small onion, cut into wedges - 1/2 cup water Directions Cut chicken into 1/2-in. strips; place in a resealable plastic bag. Combine soy sauce, cumin, white pepper, and garlic into bag & toss; Refrigerate for 30 minutes. In a large skillet or wok, heat 2 tablespoons of oil; stir-fry chicken until no longer pink, about 3-5 minutes. Remove and keep warm. Add remaining oil; stir- fry, celery, tomatoes, carrots and onion for 4-5 minutes or until crisp-tender. Add water. Return chicken to pan. Cook and stir until bubbly.
